Goobs all share the same 'base' format with each one having slight tweaks and changes between them. Some may have more drastic changes than others, but in the end, they're all still Goobs.

Depends on your definition of 'talking'.

Do they communicate to each other? Yes.

Do we have any idea what they're saying? No.

Nobody can understand thier language, and probably never will.

How many varieties/species of goobs are there?

Theres a surplus amount of different Goob species and thier varients. Most of them remain hidden. Undiscovered. But we're slowly but surely 'discovering' more and more every day.

does each type of Goob represent something?

Not entirely sure what you meant by this, but most of them dont really 'represent' anything. Sure, some of them are inspired by certain things, like this Goob inspired by jumper clamps

I dont think thats how spices work, but give it a 20 years and someone will probably figure out how to do that anyway.

I'd assume they do. Or at least have varying textures or something.

Goobs dont really have a strong sense of good or bad. They just kinda... do what comes naturally. And if that means they act a little bit evil, then so be it.
